On The Menu: Brunch Frittata Muffins

 

 

 

For the past two years, my little family and our friends’ family have gotten together to watch the F1 Grand Prix in Monaco for “Monaco and Mimosas,” a celebration of all things bubbly and delicious. We like to make a fun brunch with baked goods, fruits, and savory snacks, and share brunch cocktails. This year’s race was exciting, and it was fun adding another family to our mix.

 

 

 

 

I love bringing a brunch dish along to share. Since I’m not much of a morning  person, I like to make something the night before that I can bring with me and just warm up while watching the race. I found a recipe for frittata muffins and did a few alterations to put my own spin on it.

 

If you’re hosting friends for brunch and want to save yourself some work the morning of, try these brunch frittata muffins for your next party. The best part? You can add pretty much any flavors you want to the mix! I love basil and roasted red peppers, but you can add any combo of herbs and veggies to suit your taste.

 

 

 

:: Brunch Frittata Muffins ::

 

Coconut spray

1/2 cup roasted red peppers, diced

1/2 cup fresh basil, chiffonade/ribbon cut

1/2 teaspoon dried oregano

8 whole eggs

1/2 cup plain greek yogurt

Salt and pepper

 

 

Preheat oven to 350 degrees. Spray muffin tin with coconut spray (works best with silicone muffin pan).

 

In a bowl, whisk together eggs until combined. Whisk in yogurt until combined. Add oregano and salt & pepper to taste.

 

Using a small ladle, fill muffin pan cups 1/2 to 3/4 full. Sprinkle basil and red peppers evenly throughout the frittata muffins.

 

Bake 15-20 minutes until tops are set and a toothpick comes out clean.

 

Let rest until the frittata muffins can be transferred to a wire baking rack. Cool completely and store in a glass container in the fridge.

 

To reheat, preheat oven to 250 degrees. Place frittata muffins on a foil lined baking sheet sprayed with coconut oil. Bake until warmed through, approximately 10-15 minutes.
